8 cups water

1 tablespoon salt

2 ½ cups polenta

1 ½ cups parmesan

1 ½ cups milk

8 tablespoons unsalted butter, cut into ½ pieces

1/3 cup chopped fresh parsley

Freshly ground black pepper

 

Bring water to boil in a large saucepan. Add salt. Reduce heat to low and gradually whisk in polenta. Cook for 15 – 20 minutes, stirring periodically to retain smooth consistency. Once polenta is tender,  remove from heat and mix in cheese, milk and butter. Stir until melted. Season with salt & pepper to taste; mix in parsley. Serve.
